Bright blood red in colour with crimson slightly red brick hues.
Lifted, savoury, earthy and slightly gamey. Stewed briar-like red fruits of cherry with spiced aromas of star anise, cinnamon and Chinese five spice. There is also hints of soft crushed toasted nuts.
Still fresh and alive with great fruit weight and wonderful cleansing acidity. Gamey and ripe fruit characters up front (raspberry and strawberry) supported by savoury, spicy and slightly soy sauce-like mid palate. The finish is dry, soft, long and cleansing. A classic Hunter Burgundy style.
Enjoy with duck pancakes, pan-fried veal with a wild mushroom sauce, slow cooked pork neck or lambs fry and bacon.
Decant prior to consumption. This is an aged wine and therefore a natural sediment is present. Please stand upright for 24 hours prior to decanting.
